Storage
Keep apples as cold as possible without freezing them. Apples ripen 6-10 times
faster at room temperature than if refrigerated, 34 to 40 degrees if possible.
If you are storing a small amount of apples in a refrigerator, use a sealed
plastic bag so the apples cannot absorb odors from the other foods. If you are
storing a larger amount, such as a bushel, we recommend that they are not wrapped
in plastic because of the accumulation of ethylene gas given off by ripening
apples. It is better to let this gas escape.
Weights & Measures
One pound of apples consist generally of: 5 small apples, 4 medium apples, or
2-3 large apples.
About two pounds of apples make one 9" apple pie.
The weight of a bushel depends on the variety of the apple. Early August
apples generally weigh about 38 lbs. September apples such as McIntosh weigh 40
lbs. October apples are usually denser with more juice. These bushels may weigh
44 or more pounds. The apple industry often uses 42 lbs. as an average.
